Peaches are one of my favorite farmers market finds! I love fresh peaches in the summer and grocery store peaches ALWAYS disappoint. This week, I picked up a few peaches and thought to myself, “Some peach salsa would be great!” I said this having 1) never made peach salsa or 2) never eaten peach salsa.
So why did peach salsa come to mind? Well, I’ve been on the Weight Watchers plan for a few weeks now and I’m always on the lookout for a healthy snack. I like mango salsa so I figured peach would be good as well. It seemed like a fun way to get some fruits and veggies in my day.
After a quick Google, I found the Pioneer Woman’s recipe. I adapted mine from hers making a few changes. I used fresh peaches not canned. I also used green onions because I love them so much when they are in season and to me, they are one of my official tastes of summer. They were always on the table for summer suppers when I was a kid. If you don’t like cilantro, you can omit it.
I was very pleased with the final product! The peaches were perfectly ripe and sweet and the jalapeño added some kick. The combination was perfectly complimented with a nice salty tortilla chip. It’s like summer in a bowl! I hope you enjoy.
Peach Salsa
4 to 5 medium ripe peaches
1 jalapeno pepper
3 mini red bell peppers or a half regular red bell pepper
3 green onions
1 lime for squeezing
Handful of cilantro
Dash of salt
Chop up peaches, jalapeño (omit the seeds and ribs to reduce heat, wash hands carefully after handling or wear gloves), bell peppers, and green onions (I used all the white and some of the green). Combine in a bowl. Slice lime and squeeze the juice from each half onto your peaches and veggies. Give it all a gentle stir. If you’re using the cilantro, chop or tear it up and sprinkle in. Stir again gently.
Makes about 2 and a half cups of amazingness.
